Karaginan merupakan getah rumput laut yang diekstrak dengan air atau larutan alkali seperti kalium hidroksida (KOH). Konsentasi KOH berpengaruh terhadap mutu karaginan. Semakin meningkat konsentrasi KOH mampu meningkatkan jumlah rendemen, mampu menurunkan kadar air dan kadar sulfat pada karaginan.
